When I stopped eating dairy products, I knew that I would have to find a replacement for parmesan cheese. Marc is officially addicted and in my research, the obvious replacement was to use nutritional yeast. At first, we tried it by itself, but it’s definitely better when you add almonds or cashews and some garlic salt. My mom recently coined a great phrase – “Alma-sean”! You heard it here first 😉
Vegan “Parmesan” Cheese or Alma-sean can be used on top of pasta or rice, or any vegetable dish for that matter. I also use it when I’m making risotto and pesto and it’s delicious!
1 cup of raw almonds, blended into a rough powder
1 tsp nutritional yeast
1 tsp garlic salt (you can also use a combination of garlic powder and sea salt)
*Note: you can also use a combination of almonds and cashews, or just cashews.
Blend the almonds into a rough powder and mix with nutritional yeast and garlic salt.
